This isn't my area of expertise I'...Hi Pete <br />This isn't my area of expertise I'm afraid. The quality of the steel varies - the watermelon knife is relatively flimsy! This is as clean as I was able to get them but we haven't sharpened them (we sell all our tools this way - cleaned up but not sharpened or repaired) .
